Take slightly softened vanilla ice cream and sandwich between two graham crackers.
Give it a bit of a squish and carefully scrape excess off with a knife.
Coat each side with toasted shredded coconut. You can toast the coconut in a pan or in the oven.
It gives the sandwiches a nice edge and hides the ice cream smears. Put each one in the freezer as you make them as it melts very quickly!
Have your parchment paper and twine ready, then wrap and return each one back to the freezer.
